Beach House

As I mentioned in my previous post, we just returned from a fabulous vacation. We rented a beach house in North Carolina with some college friends. There were two other couples and their kids so all together there were 13 of us. We have been friends with the two husbands {Stephen and Rob} since we were in Bible college which was 15 years ago! We met one of their wives {Nicki} a couple years ago and this was our first time meeting Rob's wife, Brooke.

This is the house we stayed in - we were in the left side. The house itself was beautiful and I loved the way it was decorated. Each room was painted a different color and they had bright paintings and beachy decor all around the house. It was 3 stories high with 6 bedrooms and 4 bathrooms so we had plenty of room for all 13 of us!

In the living room there was fun, brightly colored furniture ...

I loved the main level bathroom - the walls were a gorgeous creamy mocha brown and it had neat beachy decor ...

The bathroom we used had this sign - Life is Good AT THE BEACH. I couldn't agree more!

There were two decks, one off of the master suite and one on the main level. We hung out there on a few nights - when we could take the unbearable heat that is!

Overall it was a GREAT house and we would definitely consider renting it again. It was so convenient to just walk across the road any time we wanted to go to the beach. It also had an outdoor shower so you could rinse off all the salt and sand before going in the house.

We also had a BLAST with our friends. We spent every evening hanging out together and talking and laughing for hours. It was fun to reminisce about the good ol' days and just laugh and enjoy not having the responsibilities that come with every day life.

The 7 kids all had a great time together. They ranged in age from 9 down to 2. And the other two Mamas were both pregnant too! It was definitely a loud and high energy house! We talked about doing this again in 2 years - just think, then there will be 9 kids! We also joked about maybe doing it ADULTS only - well maybe we didn't joke - maybe we'll actually consider it seriously! ha!

Road Trip!

We've just gotten back in town from a long and very fun road trip. We travelled through 7 states + DC and had a wonderful time! I have lots of fun photos and stories to share but first I wanted to share how we coped with the actual travelling part of the trip.

I have never been a good traveller. I get motion sickness when I try to do just about anything. Even reading a map for just a few minutes makes me nauseous! Unfortunately this makes for very long and boring car rides.

Thankfully my girls are great travellers. They can read, color, watch movies, play video games - you name it, they can do it in the car. And they did all of the above on this trip!

So for this trip I decided that we'd have some fun and find a way to keep me busy in the car. We printed out a map of the United States and we brought paper and markers to make a list. Then we looked for license plates that were from other states and wrote them on the list, and marked them on the map. {Working on our geography skills at the same time!!} Our goal was to get 30 different license plates - but instead we ended up seeing 44 different states + DC, Ontario, and Quebec!!! We were shocked and excited that we saw so many of them! Each time we'd see a new one we would shout it out and mark it on the list and map.

The only states we were missing were:

The other part of this game was taking note of vanity plates that said interesting things on them. I wrote out a list of them and thought some were very clever and showed a lot about the car owner's personality.

We also saw some baseball and football stadiums, a cruise boat, the nation's capitol and went over lots of big bridges and through one very long tunnel.

So, I have 2 questions for ya ... when you travel - what do YOU do to keep busy in the car? AND, if you ever got a vanity plate, what would you like it to say?

Father's Day

As Father's day approaches this Sunday two things come to mind. How thankful I am for my husband - the amazing Father of my children. And how much I love and miss my Dad.

My Dad was never one for a lot of fancy words. In fact I was listening to this song by Bucky Covington today and it reminded me of my Dad a lot. It talks of how his Dad didn't say 'I love you' much, but he was the one who would always go out and check the oil in the car, make sure the tires had enough air, etc... and how that was his way of showing how much he loved his son.

That is exactly how I feel about my Dad. Although he didn't always express himself with many words, I never doubted for a second that he loved me deeply. At my wedding reception, he surprised me and had a family friend sing the song 'Butterfly Kisses' to me. It was the first time I had ever heard it {it became very popular that year} and it made me and everyone else at the reception cry! It was such a sweet reminder of how much he loved me.

He died of leukemia 6 and a half years ago. One of the hardest things I still struggle with is wishing he was here to see my girls grow. I know how much he would have loved playing with them, teasing them, and being silly with them. I know it's silly, but I would also love to know that he's proud of me. That he is proud of the person I've become and the way I've raised my girls. I wish he could see the wonderful little ladies they are becoming.

Now my husband - I feel inadequate to fully put into words how grateful I am for him. He is patient, caring, understanding and kind. He works so incredibly hard for all of us. He helps me in a million ways - like doing laundry, dishes and yard work. He puts myself and the girls above his own wants and desires ALL the time. He spends a lot of time doing things with the girls - playing ball, watching sports, snuggling together, talking about their day, taking them on errands and lunch dates, etc. The girls adore him and he feels the same about them. The Lord blessed me BIG time when he gave me Bob. He is truly my best friend and soulmate.

To my Daddy I miss you every day and thank you for all those years when you raised me and taught me and guided me so that I could be the person I am today.

To my husband, Bob; You are truly my best friend and I thank God for you every day. Happy Father's Day to the most amazing Daddy our girls could have ever hoped for.

And finally, Happy Father's Day to my wonderful Father in law - I KNOW that Bob is the wonderful man he is today because of your influence in his life. You have always treated me like I was your own daughter and I love you!

Pumped Up Pancakes

Ok have y'all ever seen that show on the Food Network called 'Semi-Homemade' with Sandra Lee? Well that is the kind of cook I am. I love making things homemade, but I also love using quick and easy shortcuts.

One of my faves is something I like to call 'Pumped Up Pancakes' - pumped up meaning they are pumped up with stuff that is good for you!

Here is what you will need:
I use traditional Bisquick pancake mix - most of the time I just double the recipe on the box.
Then I add - a large scoop of Vanilla Soy Protein powder
- a tablespoon or so of cinnamon
- 2 tablespoons of ground flax seed

Mix well then cook on a hot skillet.

These pancakes come out nice and thick and fluffy - I love me some thick, fluffy pancakes!!!!

I made these the other day on my birthday ... then ate them with some yummy butter and some of our freshly made strawberry jam - yummy!

Who needs syrup when they taste this good? ;)

Mexican Cheesecake

***Be forewarned, this is NOT a healthy recipe***

OK, moving on .... I got this recipe from a friend and was dying to try it. But my hubs doesn't like cream cheese and I knew it was too much to make for just myself and the kids. So when my brother, sister-in-law, niece and Mom were coming for lunch a couple weeks ago I was like 'ding-ding-ding-ding now I can try that recipe!'

{I have to say, it looks a little funky in the pic, maybe I should have rolled the crescent rolls flatter? But either way, no matter how it looks it was simply delish!}

INDULGENT, easy and DELISH!

2 packages cream cheese
1 1/2c sugar
1 tsp vanilla
2 pkg crescent rolls
2 tsp cinnamon
1 (WHOLE) stick butter (mmmmmm)

Press one package of crescent rolls into bottom of 9x12 baking dish.
Mix together cream cheese, 1 cup of the sugar and vanilla.
Spread mixture on top of rolls in pan.
Press 2nd package of rolls on top of mixture.
Mix together remaining 1/2c sugar and cinnamon in small bowl.
Sprinkle on top of casserole.
Melt stick of butter and pour over top of entire casserole.

Bake at 350 degrees for 1/2 hour. Serve while warm . We served it with sliced strawberries and some cool whip {although it certainly didn't need anything extra!}

There will be NO leftovers...

Busy but fun!

Whew, the past few days have been such a blur! So many fun events and now I'm simply exhausted!

I apologize in advance because although I've been super busy and having lots of fun I have NO pictures to show for it! Sometimes ya gotta just lay the camera down and go with the flow!

Thursday was my Mom's birthday, it was also the day we babysat for little 'R'. So the 3 girls and I met my Mom at her work, then went out to Friendly's for lunch and ice cream. That afternoon was pretty low key - just playing with R and hanging around.

Friday was MY birthday - I had grand plans of taking the girls to the beach for the day but it was cloudy and very unseasonably cool. So instead we went to see Marmaduke at the movie theater - which was hilarious by the way! Then we went to buy the girls new swimsuits, got a yummy Caramel Macchiato from Starbucks, then home where the girls used the tiny smidgen of sunlight to jump in the pool for a while.

That evening my awesome hubby watched the girls so I could go out for my birthday dinner with my 3 girlfriends. We went to the Olive Garden which as always, did not disappoint! Then we came back to my house where we had homemade cake {made by my friend Sandy} and opened presents - they got me the cutest and most fun stuff. I love my friends!!

On Saturday the girls and I went to the flower shop where I work and I helped deliver 145 arrangements to a local event while the girls stayed and 'helped' at the shop. Then we went home and cleaned our house for a couple hours.

In the afternoon my Aunt Chris, cousin Megan and Chris' friend Maggie came to visit from out of state. They were going to a concert near my house and Megan was going to spend the night with my girls {she's my cousin, but she's my daughter's age}.

My amazing hubby AGAIN watched the girls {and Megan} so that my Mom, my Aunt, her friend and I could all go out for an awesome buffet dinner. Then my Aunt and Maggie went to the concert and my Mom and I went home.

Megan spent the night and the girls had a wonderful time with her ... of course they stayed up late - I think I was asleep before they were!

Sunday morning we got up and went to church, then our Bible study group was helping our leaders move. So the men went to help move the big stuff and the women and kids came here to my house for a swim/BBQ day. It was not warm and not sunny though - but as you may have guessed that didn't stop the kids. They still swam a little, played a lot and just had a wonderful time together. When the men were done they joined us here and we all ate burgers and hotdogs for dinner together and enjoyed some wonderful fellowship. We love our Bible study group!

And now it's after 10pm on Sunday night ... I've eaten out 5 times in less than a week - eaten LOTS of yummy things that were not at all healthy for me, not exercised one bit. And now I'm not only tired, but feeling super sluggish and unhealthy! LOL

Soooo..... tomorrow is a great day to *try* to get back on track before we go on vacation {which is soon!} and hopefully we will get some school work done too so that we can finish our school year in the next few days.

Strawberry Picking, dip and jam

The girls and I went Strawberry picking at a local farm last week. We went with some friends and it was such a beautiful, sunny, hot day. We picked over 12 pounds of strawberries! It was hard to make ourselves quit picking, there were so many gorgeous, juicy berries to pick!

The moment we got home I washed and sliced a large bowlful of them, mixed up a super simple dip, and we headed out to the deck to enjoy. You should have seen the 3 of us with our forks - we were like savages and within a few minutes the whole bowl of berries and the whole bowl of dip were long gone!

Here is my super simple fruit dip ...
Take a container of flavored yogurt - my personal fave to use is KEY LIME but I also think LEMON would be yummy and refreshing.
Add a couple large scoops of cool whip {or the whole container if you're serving a crowd}
Mix the two gently together and serve!

Then DIP, DIP, DIP your berries directly into the yummy dip!

YUM!!!!

With the remaining 11.5 pounds of fruit I made some freezer jam. It's soooo simple and easy to make!

The best thing to do is just buy a box of SURE JELL pectin. You can find it at the grocery store or sometimes Walmart. It's the size of a box of Jello. Inside it gives very simple instructions for making freezer jam. They have all kinds of recipes for different kinds of fruits - but make sure you buy enough SUGAR and SURE JELL for the amount of fruit you've got!

And if you think you have enough sugar, go buy more ... because with strawberry jam you use 4 cups of sugar for every 2 cups of fruit! I kid you not. And don't even think about changing the recipe to make it less sugary - it won't set right if you adjust the amounts. Just go with the flow and know that it's still healthier than the store bought jams you could be buying. =)

I bought 3 boxes of SURE JELL and should have bought about 2 more. So you really can't buy enough if you have a LOT of berries like we did.

So, just to be sure you have everything on hand before you get started - make sure you have:

*Sugar

*Sure Jell

*Berries or other fruit

*Clean containers to put jam in. {I love using mason jars but was too cheap to buy them this year so I simply got plastic rubbermaid containers}

In the middle of winter there is nothing I love more than having some fresh strawberry jam over my hot pancakes ... helps me remember those long, lazy days of summer!

I better find a bigger freezer!

Summer Fun List!

I had this great idea. A couple weeks ago I was telling the girls that I didn't want to let the summer pass us by without doing some really fun things that are classic to summer. Summer is always supposed to be such a relaxing time, but it always seems to fly by faster than I would prefer. And I wanted to make sure we didn't just let it slip by and forget to do the fun summery activities we always talk about.

So one day we went out to the beach and while we were these we all brainstormed about things we'd like to do this summer. Some were places to go, some were crafts to make, some were just fun things to do .... and we made this huge list until we finally said 'ok, I think our list is long enough for now!'

THEN, in the same week I saw AT LEAST two other bloggers who did the same thing - PLUS I got my Family Fun magazine in the mail and they had the same idea too! So I guess my idea wasn't too original, but still, we're pretty excited about it!
Of course, I had to take it one step further and buy this super cute poster and add all of our ideas on there - it's now hanging on the front door so we can see all the ideas every day.

Some fun ideas are:

*go to the drive in movie

*pick fruits and make jams

*make tie dye shirts

*have sleepovers with friends

*beach days

*go camping

*watch fireworks

*go to some local farm that sell fresh made ice cream

*go to the sunflower farm

etc, etc, etc .... I added a few more after taking this picture. On the right side I wrote things like beach days, bike rides and camp fires and we will add tally marks each time we do those since they will be more than once.

I told the girls I'd love to get to the end of summer and feel like we had a summer full of fun stuff - almost like Summer Camp - with a ton of amazing memories. Maybe I will even print out some pictures at the end of the summer and let the girls put together a summer scrapbook.

Much better than sitting on our duffs watching TV all summer, dontcha think?!

Maybe I should play the lottery?!

Just kidding, but seriously, I WON another blog giveaway! My friends will laugh because I always say 'I never win anything' ... the story of my life has literally been that I never win stuff. Which is one reason that I DON'T play the lottery and DON'T waste my time at casinos ... I just never win so it's a waste to me.



But I guess things have taking a turn for the better. Although I have to let you know that my odds are still pretty low - I'd say that since I began blogging a few years ago I've entered hundreds of blog giveaways - and now this makes my winning total 4 - yep, 4 out of hundreds! But hey, I'm not complaining, I'm so thankful and excited to win anything at all!



And this one, well let's just say I almost started crying when I saw that I had won. I think you will remember that I posted a video a few weeks ago {?} about 'The Gift of the Ordinary Day' - I'll re post at the bottom in case you missed it.



Well anyway, this video touched my heart in a special way. I get so caught up in my own selfish thoughts and desires many days that I forget to cherish the everyday moments with my children. And all too soon, I know they will be grown. I read somewhere that the 2nd 8 years of your child's life go twice as fast as the 1st 8 years. Since I have a 7 and 8 year old right now this hit me in a big way. I feel like these past 8 years have absolutely FLOWN and can't even imagine waking up in the blink of an eye to 15 and 16 year olds!

Silly Bandzzz

Do your kids have these? I guess this is a new craze that has hit the nation recently ... my girls just learned about them about a week or two ago and already they are hooked!

Many of our local schools are banning them because they are causing too much distraction in schools, and kids are also using them to trade/bribe for things which they shouldn't {example: a kid trading his lunch for silly bandzz}.

Here in our homeschool, they are fine. And even though I'm not one to buy into the latest fads, I think this one is pretty harmless. And just for the record, I have not spent a dime on all of these. The girls were talking to my neighbor about them and the next day she gave them some! {She is seriously the sweetest neighbor ever!} Then the girls used their own spending money to buy a package each.

The neat thing is that in each package there are 6 different designs, with 4 of each design - so the girls are already talking about which of their friends they plan to share them with.

For those who are not familiar with Silly Bandzzz - this is what they look like when not on the wrist - they come in hundreds of different shapes. It's kinda wild how they retain their shape even after they've been worn for hours.

A few of our local stores have them and they are about 5 bucks for a pack of 24.

But if you want to come over to visit the girls will probably share a few with you!

Drive In Movie Night!

On Friday night my hubs and I took the girls to the drive in for the first time. Bob and I have not been to the drive in for years and the girls had never been.

We kept putting it off because it's a very late night and we wanted to make sure the girls were old enough to go and enjoy it. The drive in is about a 30-40 min drive from our house, the movie doesn't start till dark {around 9pm} , then they play a double feature {we only stayed for the first movie} , then you still have to drive home. Even watching only the first movie we didn't get home till 11:15. The youngest fell asleep on the way home!

The girls brought pillows, blankets and stuffed animals so they could snuggle in the back of our SUV to watch the movie.

We stopped at the Dollar Store on the way there to buy giant sized snacks for a fraction of the price they would charge at the theater. We also brought our own drinks. The only thing we bought there was popcorn, because you HAVE to have fresh, hot, buttery popcorn!

We saw the final Shrek movie - overall verdict - it was OK. I thought the earlier Shrek movies were better but of course this one was still funny.

It was a really fun, family night out and we can't wait to do it again!

I'm compiling a list of fun summer activities so we don't let the summer slip away and this was one of the things on my list -- more to come soon on our summer fun list!

Kids say ...

I really want to be better about writing down the funny things my kids say. I'm not very good at journal keeping, so this blog is essentially the place for me to remember these things.

Today while riding bikes my oldest daughter was a little ahead of us on the trail - so the younger one shouted 'Hope, wait up for us!' - then when she caught up to her she zoomed past her and said 'Come on, let's go, what are you waiting for?!'

The girls are playing in the pool this afternoon ... I love when they play in the pool because it keeps them occupied for HOURS, plus, they always come up with the greatest things to play. I love listening to them use their imaginations!

Today I overheard, "Um yeah, can you give me change for a million?"

hahahahahahaha .... no wait, do you think they're hiding a secret stash from me?!

3 Recipes

I have 3 recipes to share today ~~ hope you enjoy!

First...
NO-BAKE PROTEIN BARS

2 cups oatmeal, uncooked
1/2 cup natural peanut butter
4 scoops protein powder, vanilla
1 TBSP ground flaxseed
1/2 cup water

1. Knead all ingredients in a large bowl.
2. Line a square 9x9 baking pan with wax paper. Spread dough
into pan using spatula.
3. Freeze for 30 minutes
4. Remove from freezer , cut into bars.

makes 8 bars, 230 calories each, 15 grams protein, 21 grams carbs.
{Mine turned out a bit crumbly, I think next time I will increase the peanut butter to 3/4 of a cup or maybe even a full cup. My kids loved these, makes a great snack and the protein will hold you over until the next meal!}

Next, as a part of our History Class this year we decided to try a recipe from the colonial times ... Hasty Pudding!

I thought it tasted a lot like cream of wheat ... the girls took a few bites and said it was OK but weren't big fans of it overall. All in all we probably wouldn't make it again, but it was fun to try for the sake of 'school' work.

And finally ... last week I made Cinnamon Chips with Fruit Salsa and boy-oh-boy it is my new favorite snack! I saw the recipe on 2 different blogs on the same exact day {and these are not people who know each other!} so I figured it was a sign that I was meant to try making them! haha

I'll link you to the recipe because I didn't get a picture - but basically it takes about 15 min total for a really yummy snack. {Oh and word to the wise ... don't try to use the Low-Carb Wheat tortillas - just go for the regular ones, trust me they will taste better!}

Why my photo is the big central photo on our new blog header?? Well it IS June, which IS my birthday month and you know I AM all into myself and being vain and all that ...

I picked the photos I wanted in Picasa and had Picasa made a collage for me and this is how it turned out. Totally random - but I liked it so I decided to go with it. Hope you all know that I'm really NOT vain and into myself! =)

New Blog name ... new design

Yes I have changed the name of my blog yet again! Why, you may wonder? Well, I love Wellspring Academy and we still are Wellspring Academy - but my blog is about so much more than just our homeschooling adventures. In fact, that is a very small part of who we are as a family. Our family and our blog reflect so many other things ... our family adventures, our fun memories, the crafty things I enjoy, etc. So I felt like the blog should be more about our life as a whole, instead of just the one area of our school life.

So why did I choose this title?

My husband and I heard this song years ago, before we ever had children and it quickly became a favorite during the baby/toddler years. Despite being weary parents who had trouble finding time for each other we would always claim this truth: 'Well, there's no place that I'd rather be
Well, it's two hearts And one dream
I wouldn't trade it for anything
And I ask the Lord every night
For just another day in paradise'

This is what this song means to me ...

Even though we live in this small house,
even though our budget sometimes feels too tight,
even though the washing machine breaks down at the worst moment,
even though a kid gets sick when you were looking forward to date night,
even though you have a change in plans when you least expect it

~~~it's ALL worth it because ~~~

It's the hugs at the end of a long day.
It's sharing our hopes and dreams for the future.
It's the snuggles and kisses from little girls.

Sweet Shot Tuesday

Is it really Tuesday already?!

We had a gorgeous Memorial Day weekend here. Lovely weather and lots of relaxation. And finally .... beach time!

I have 2 sweet shots to share - first Joy and the little baby girl that we babysit, I love how Joy was helping R at the beach and playing with her. It was so cute! Gosh, it's hard to believe my girls were that little, in a way it seems like forever ago, and in another way it's all happened in the blink of an eye!

And here is Hope just loving every minute of the sand, sun and surf!
